1-1,5 kg djupfryst benfritt
nöt- eller älgkött
Kryddad saltlag:
1 L Vatten
1 dl Salt från Nordsjön (Norskt havssalt)
1 tsk (5 ml) Ekologiskt socker
½ tsk Krossad svartpeppar
1 Smulat lagerblad
15 Krossade torkade enbär

görs av fryst kött som steks otinat i låg ugnsvärme och därefter läggs i en
kryddad saltlag. Metoden passar särskilt bra för köttbitar på 1-1,5 kg av mindre
mört nötkött eller älgkött, t ex från bog eller ytterlår.
Lägg det frysta köttet otinat i en ugnssäker form. Flera köttbitar kan tillagas samtidigt. Sätt in köttet i nedre delen av ugnen i 80 -100 grader och låt det stå i ca 10-12 timmar. Lämpligt över natten. Det behöver ingen passning. Stick in en köttermometer mot slutet av tiden, eller efter 2-3 timmar. När termometern visar 60 grader är köttet rött inuti, vid 70 är det rosa och vid 75 är det helt genomstekt.
Det tar två år för enbären att mogna. Till vänster är bären gröna. De tog jag i skogen 060303. Det var så mycket snö i skogen så jag valde att ta blåmörka torkade enbärfrån i somras istället. Koka upp vattnet till lagen, lägg i salt och kryddor och koka 3-4 min. Lägg det varma köttet i en bunke och häll över lagen så det täcker köttet. Låt stå svalt och övertäckt 4-5 timmar, köttet tar då smak av lagen.
Tag upp köttet, skär i tunna skivor och servera.

1 – 1½ kilo frozen bone free meat from cattle or elk
Zestful ”saltlag” Saltlag is a mix of water, salt and herbs
1 litres of
water
1 decilitres of salt from the North Sea (Norwegian Sea salt)
1 (5 ml) the spoon of ecological sugar
½ thes poon of black peppar
1 crushed bay leaf
15 crushed dried juniper berries
This north Swedish dish is made of frozen meat which is roasted unfrozen In a low oven temperature. When it is ready and still warm in will be placed in a zestful “saltlag”. The method is specially good for meat-pieces which has a weight of1- 1½ kilo and which muscles have been working when the animal was alive. It can be the shoulder or the winger thigh of the animal. One shall not use roach meat.
Put the frozen meat and it shall be frozen in a form which is made for oven use. Several meat pieces can be made at the same time. Place the meat at lower part of the oven at a temperature between 80 -100 C and let it be in the oven for 10 12 hours. A good idea is to have it there over the night. You do not need to look after it. Put in a meat thermometer at the end of the time or after 2 maybe 3 hours. When the thermometer shows 60 degrees it means that the meat is red inside. At 70 it is rose. At 75 the heat has going through totally.
Boil the water. Place salt and herbs in the water and let it boil for 3 – 4 minutes. Place the warm meat in a batch and pour over the “lag” so it will cover the meat. Place it in a chilly place and have it covered and let it be there for 4 – 5 hours. The meat will then take taste of the “lag”.
Take up the meat and cut in thin pieces and serve the dish.
